Castilleja de la Cuesta - Sevilla

The little town of Castilleja de la Cuesta is located in the western sector of the province of Sevilla and in the far eastern region of Aljarafe, leaning over the river Guadalquivir. In 1996 it had a population of 15,726 inhabitants.

Some historians relate the origin of this town with the tartessian city of Ucia. The Roman colonization of these lands is specified in the fortified camp of Castra, a name that kept the Visigoths and the Arabs become the farmhouse of Castalla Talasana. It is conquered by Ferdinand III in 1248, maintaining its agricultural character. In the second half of the XIII century, this land is donated to the Military Order of Santiago, which is responsible for repopulation. After the fratricidal war between Pedro I the Cruel and Enrique de Trastamara, this latter proclaimed new Castilian monarch, allocates land to his ally Guzmán, within whose family remains Castilleja until the XIX century.

Gastronomy

La gastronomy of Castilleja de la Cuesta has been one of the great riches in the vast panorama of the culinary culture of Andalusia. With a sign of identity, in its preparation techniques are combined with the latest popular contemporary kitchen, leading to a kitchen full of richness and variety.
Its dishes reflect the passing of different cultures that have left their mark on the area. In its preparation are taken and mixed different elements and techniques that have allowed having a unique style, characterized by the use of certain spices, along with excellent raw materials.
Castilleja has a varied cuisine that offers the best products of the garden, noted for its quality and rich variety of vegetable, eggplants, squashes, cabbages, asparagus, spinach sand artichokes become excellent raw materials for making the best dishes and more stews appreciated.
Among the extensive gastronomy, we can find the meat, poultry or game. The different ways of dressing produce excellent dishes prepared both traditional and imaginative way resulting in delicious dishes.
The seafood is also found among the rich cuisine of the Villa. But it is certainly making pastry which has led Castilleja de la Cuesta to be known in the rest of Spain.
Fritters, pastries and especially the manufacture of their famous cakes, whose production began in the second half of the XIX century, raises the pastry of Castilleja de la Cuesta to the highest quality and is one of the most important industries of the town.

How to get there

To access Castilleja de la Cuesta from Sevilla we have two different routes: the first one could be through the national highway 431 Sevilla-Huelva through our area and following up the Cuesta del Caracol coming into our village. The other access route to Castilleja de la Cuesta is through the A-49.
The proximity of Castilleja de la Cuesta to Sevilla facilitates the access by plane from San Pablo Airport from Sevilla.
